Fall is in the air! The air is crisp, the leaves are turning, and the forest floor is putting on its best show of the year! October is prime time for mushroom enthusiasts, and here at The Mushroom Champ, we're ready to embrace the harvest season, the hearty meals, and the hints of spooky fun. 👻

🍂 Colorado Fall Foraging Info: King Bolete & Aspen Boletes

As the aspens turn gold and the first frosts arrive, Colorado's high country produces some of the most sought-after edible fungi. This October, keep your eyes peeled for the mighty King Bolete (Boletus edulis) and its cousin, the Aspen Bolete (Leccinum insigne).

  • King Bolete (Porcini): This is the crown jewel of fall foraging! Look for its fat, brown cap, thick white stalk, and spongy underside (no gills!). It loves to grow near spruce, fir, and pine trees in higher elevations. Its rich, nutty flavor is unmatched for sauces and drying.
  • Aspen Bolete: Easily identifiable by its burnt orange to reddish-brown cap and the distinctive shaggy, dark scales on its stalk. As its name suggests, you'll find it growing exclusively in association with Aspen trees (often under the leaves). They are excellent sautéed or fried.

⚠️ A Word of Caution: Boletes have toxic look-alikes. Always confirm that the spongy underside does not stain blue rapidly when bruised. Some edible Boletes do stain blue slightly. Never eat a mushroom you haven't positively identified. If you're a beginner, join a local fungal foray or consult with an expert before harvesting.

  1. Gently scrape out the gills of small Portobello caps.
  2. Mix together ricotta cheese, minced garlic, fresh parsley, and a little salt and pepper.
  3. Fill the caps generously with the ricotta mixture and top each one with a single sliced black olive.
  4. Bake at 375°F (190°C) for about 15-20 minutes, or until the caps are tender and the filling is warm.
